When in a sealed container, roasted coffee has a pretty long shelf life. In general we don't sell coffee that's more than 4 months old, but most coffee is still delicious at 6 months and beyond. The coffee you see at the grocery store that doesn't include the roast date is usually older than that.
Coffee needs time to settle and degas after roasting. It's drinkable after 3 days and really hits its stride after 10 days.
